Need Advice for Oak Kitchen Upgrades

We are about to embark on upgrading the kitchen of an adobe house built in the mid-80s. Everything in the kitchen is original. The cabinets are oak and the counters are talavera tile. At the moment, we're planning to replace everything but the oak cabinets. We had considered painting the cabinets but might actually prefer keeping them as they are, though we'll definitely replace the hardware. Overall, we'd like to stay true to the old Arizona adobe style. So, here are our primary questions:

- Would you paint (or perhaps re-stain) the oak cabinets or leave them as they are?

- The walls are a very stark white. Should we repaint them a warmer white or beige?

- Paint the ceiling?

- Paint the Island?

- Counter and backsplash suggestions?

- As you can see, there's a lot of wood here. Should we tone it down or break it up somehow? Or just embrace it?

- Any advice at all would be greatly appreciated!!
