small subway tiles not a good idea in 1890’s bathroom?

I have a small master bath (8x8) in a large 1890’s home. I have to demolish & redo the bathroom due to a leak under the floor in my concrete/lead pan neo angle shower.

I would like to use subway tiles (possibly self-spacing 3&6) in the entire room, including the shower, but my contractor wants me to use larger wall tiles (probably 12 or 18”). He said the smaller tiles have too many cuts & may not lay properly. He said the wall may be uneven & it could be more noticeable with the smaller tiles. They’ll be taking it back to the studs so that explanation makes no sense to me. Also, he doesn’t want me using self spacing tiles as they may interfere with his special spacers (1/16”) which he said will help the tiles lay flat. Please advise if I should find different, larger tiles or a different contractor. Thank you
