Chefkev and others, my problem is solved! The appliance guy didn't seem to think my stove needed recalibration, but did it "because we like to keep our customers happy." Hey, call me picky, but yes, I do want the full range of cooking options! So he tweaked the flame on all burners, making the minimum flame height lower than previous. He was skeptical that it would make any difference, but said he had done everything that could be done in this regard. And let me tell you, it is great! Last night I made pizzas. The sauce sat in a small pot for nearly two hours, reducing as it should. No burning, no boiling, just a nice steady steam. Meanwhile, on another burner I had a pot of onions on low for about 45 mins. Lovely and carmelized at the end, again with no burning and hardly any need to stir. It was magical. Anyway, thanks to all here who gave me the confidence to insist on a service call. If I didn't KNOW my stove wasn't doing what it could, I might've accepted the narrow heating range it arrived with.

Still in love! I did have a small issue last night that was slightly annoying - I made a frittata using a large, deep skillet with a slightly arched handle and discovered when I went to stick it in the top oven, the handle made it too tall to fit. The shelf in the top oven is fixed, so no way to make more room. Not a big deal, just something to keep in mind. The lower oven heats fast so it didn't delay me much to move the frittata down there. The other thing I have noticed is that the top oven bakes less evenly than the bottom, but since it doesn't have convection that is to be expected. I use it mostly for roasting vegetables anyway, and it does a great job there. I love the powerful burners and use the front corners more than anything else. However, the center burners get good and hot too, and the included griddle is great for burgers, etc. If you frequently use small (8" or less) pans, you might find the burners unwieldy because they are all fairly large, except for the back left simmer burner, but this doesn't bother me.

I have the previous version (just the single oven + warming drawer). The new ones were just coming out when we ordered appliances, but I didn't like the look of the white with our new medium-dark cherry cabinets and a stainless steel hood. And the black just seemed too black. So I gave up on the double oven. I've been thrilled with the induction, although the knobs are very easy to adjust by accident if you are the type to lean on the front of the stove when cooking. On the plus side, they are super easy to adjust the temperature in small increments. I second the Profile if you are looking to save $$$. The induction top is the same, it is just a bit scaled down in features (touch controls vs knobs, no warming drawer/second oven, etc).

We absolutely love our Bosch induction range purchase 2017. I did a review on it after purchase here and there is a long thread of comments from that post: https://www.houzz.com/discussions/4725146/brief-review-of-newest-bosch-induction-range-hiip055u#n=116 we don’t have issues with the electronic control layout; like anything you get the hang of it. It is nice to have no knobs to clean. We are particularly in love with the flex zone which was hard to find on a range top in 2017. The control board did die at one year and was replaced without problem under warranty. We have had no electrical problems or any problems whatsoever with the machine since. The advice to get the longest warranty available is a very good one as all appliances these days have so many electronic parts.
