This was always my favorite part of going to Stephenson's restaurant in Kansas City. They were very generous with this recipe publishing not only in the local paper but in a cookbook that they compiled and sold at their restaurant. I served it Thursday like they did -- in individual servings:

STEPHENSON'S GREEN RICE

3 c. cooked rice

1 c. chopped parsley

1/2 c. grated cheddar cheese

1/3 c. chopped onion

1/4 c. chopped green pepper

1 clove garlic, minced

14 1/2 oz. can evaporated milk

2 eggs, beaten

1/2 c. vegetable oil

1 T. salt (and yes, you need it)

1/2 t. seasoned salt and black pepper

juice and grated rind of 1 lemon

Mix rice, parsley, cheese, onion, green pepper, garlic in greased 2 quart
casserole. Blend rest of ingredients. Mix into rice. Sprinkle with paprika.=
Bake at 350 degrees about 45 minutes, or until like a soft custard.
