There are a lot of styles of kugel. The kind I like is more dry, with a crispy top. I tried to make spaghetti squash kugel last night using a baked spaghetti squash mixed with a caramelized onion, 1/4 cup of matzoh meal and 4 eggs, baked for an hour at 350. It was too watery for my taste. Any way I could dry it out? Maybe saute the squash to evaporate some of the water? I baked it in the oven without adding any liquid. Maybe salt and drain it after baking? I've blotted canned pumpkin out before with paper towels, maybe I could have blotted it. Anyone ever tried any of these techniques?
