It's going to be black beans and rice with some avocado and I think there might be a cooked chicken thigh I can quickly thaw and add to it as well.

Been in since Monday. Today I had two soft boiled eggs over mini wheat buns with fried turkey bacon. Most enjoyable.

Fixing to make homemade pimento cheese for my game day friends, to enjoy, tomorrow.

I will have some brown rice with chicken, and I will toss in some frozen peas for a veggie.

I had leftover coconut curry stir fry (the kit from Kroger) to which I had added tofu and a few peanuts when I cooked it, and I tossed in a bit of cooked chicken tonight; also an orange.

I will be eating leftovers for a couple more days -- roasted chicken, and beef brisket. I have a bag of turnip greens to add to one or two meals. I plan on making 8 bean soup with the ham bone from Christmas after that.

DH was late and starving, so I did the easy thing. Sauteed bell pepper, mushrooms, onion, garlic, a little zucchini and some fresh spinach. Tossed in some bowtie pasta and some jarred (gasp!) alfredo sauce. Garlic bread and good to go.

Not a lot of food in the house, was going to go shopping for a few things today but decided to stay in due to the cold weather. I thawed out some leftover manwich sloppy joe stuff and ate it on bread earlier, since I didn't have buns. I'm now boiling a couple eggs for dinner.

We stopped to eat earlier. The special of the day was home made chicken and dumplings or shrimp basket. He got the chicken and dumplings I got shrimp.

I really wish I had got the chicken and dumplings it was so good. It was a huge bowl full plus a mini loaf of corn bread.

I had chicken and dumplings for dinner too, Raven! While I don't believe the recipe I used was truly Southern, it was tasty nevertheless. Broccoli for veggies.

We had take out from our favorite barbecue restaurant....sliced brisket and pork ribs.

Cheese and crackers. I really need to get to the market, but my kitchen is still pulled apart from painting because I am washing everything before returning it to the cabinets.

Huevos Rancheros

Chicken, rice and steamed carrots.

We smoked a standing rib roast and a pork rib roast--diner's choice. I made a salad to go with mine. It'll be mix and match again tomorrow, or folks can choose leftover enchiladas or pasta with Italian sausage and garlic sauce.

We had baked acorn squash and pork chops sautéed with apples, onions and stewed with white wine. An experiment with the bone in chops but they turned out delicious.

Had leftover baked beans from yesterday, so dinner tonight was a sandwich of just cold baked beans on a rye bun, a childhood comfort food for me. Since it was so cold outside, I did warm up the beans a little just to make DH happy. Added a garden salad and called it dinner.

When I was in grade school, I walked home for lunch and sometimes leftover baked beans were what Mom had on my plate and sometimes a slice of her home made rye bread. It was quicker to eat them together as a sandwich. I loved it then and I still do.

I ventured out into the arctic tundra to a local Mexican joint and brought home some fantastic Fajitas with chicken, steak, shrimp, and chorizo. There was enough left over to bring to work for lunch today. Yippee for me!!

We were in the vicinity of a favorite seafood market yesterday so I collected some ingredients for a creamy seafood chowder. Boy, was it good!! I even used the shrimp shells to make a flavorful broth to amp it up a knotch.
