Overwintering Ensete - is this normal?...

Purchased a couple of Ensete Ventricosum Maurelii in the spring, and super surprised and impressed with how quickly they've grown, shooting up from 6 inches to around 5ft in one summer. Unfortunately however, my winters are too cold to leave them outside. I'm overwintering the smaller of the two in the conservatory, with the larger one having to live in the shed until spring. I'm a little worried about the latter, as the tips of the cut leaf stalks are turning soft; is this due to not drying it out sufficiently before storing, and will this make it through until spring without turning to mush?!... it went into storage at the beginning of November after leaving it upside down for a couple of days to drain excess water; maybe I should have dried it out for longer?
