Remove kitchen window???

We are going to update the 2nd floor kitchen in our Victorian house. The room is a square with two windows per wall on two of the walls (opposite walls) and two doors per wall on two of the walls. The sink and cabinets are along a window wall. The stove and fridge are on a door wall. No prep space next to the stove and it looks weird next to the fridge. Our first plan is to replace the 2 (huge) windows that actually extend below the top of the cabinets with smaller windows. And we want to incorporate the stove into that wall of cabinets. The only place that it works is in front of what will be a new window. I hate to remove a window with slight view of water but there are tons of windows on that side of the house. We thought of putting an island in the middle with a stove and oven but this is a rental unit and we don’t want to spend the money. The wall opposite the cabinet wall can’t have anything on it because it is a walkway. The wall opposite the fridge/stove is empty and could be utilized but has limited space because of the two doors. Any ideas??
