Leftover duck sauce; use for fish?

Kevin very much liked the sauce I made for the duck, and we ended up with quite a bit leftover. I told him it would be good on salmon, but I also told him that salmon season is over and all we will be able to get is salmon that has been frozen - he does not want that, even though I am okay with it if I make it teriyaki style, which this would be similar to. Here are the ingredients I used in the duck sauce:

1/4 cup honey
6 Tbsp pomegranate molasses
2 Tbsp orange juice concentrate
1/4 cup Cognac or brandy (optional)
1 Tbsp soy sauce
2 tsp chocolate Habanero sauce

This varies slightly from the original recipe, and I also accidentally used seasoned soy sauce soup stock instead of regular soy sauce, and so I had to double the amount, as it is watered down a bit. Anyway, I liked the results. I used pomegranate molasses instead of regular molasses, and I had to increase the amount from 1/4 cup to 6 tbsp because it is also more watery than regular molasses. I boiled it down to the thickness I wanted anyway. The package that the duck came in had a recipe for pomegranate duck, and this made me think that pomegranate molasses would be good in the sauce. Plus I have the pomegranate molasses and seldom use it, but I do like it. I just don't make sweet dishes that much. I used my own hot sauce (chocolate Habanero) instead of Sriracha as was specified in the original recipe, and so I had to use much less.

Anyway, what do you think would be a good use for this leftover sauce? Kevin does not eat pork, and so that it out of the question, and I do not like sweet glazes on pork or ham anyway, but I do like them on salmon. Is there another fish I could use? I am thinking maybe I should buy Opah, but it has such a bland flavor that it might get lost in the sauce. Would shrimp be good? I have some in the freezer.
