Comments (11)My friend does 3 or 4 pounds or more at a time. She lays about 6 or 7 sheets of newspaper in a sheet cake pan, covers with paper towel and lays a rack on top of that, lays on the bacon, covers the bacon with another layer of paper towel (to cut out the oven spatters) and bakes it at 400...the length fo time depends on the thickness of the bacon. Then she removes the bacon and puts it in a plastic bag and freezes it for quick sandwiches and tosses the whole greasy mess into the garbage. I have never needed to cook that much bacon at once, the most I do is a pound...but I will say it's nice when for example I take a salad to ehr house for dinner, she'll say..."Want some bacon on that?" and quick as a 15 second microwave zap there is hot crisp bacon! Comments (13)Random Thoughts Thunk While Cooking: A cook is only as good as the ingredients and ingenuity used. What a nightmare. What a colossal nightmare. lol For the non-liver lovers, chicken would've been a good substitute, but did I get breasts or tenders. No. I got thighs because it reminded me of a dinner made by my Aunt Mary-on-the-farm when I was a child. I cleaned and cut for a very long time. The chicken livers were frozen, but, in the past, it's never been a problem. These things were just awful - all mashed up together (like someone took a meat pounder) to the point where I really had to hunt for the connective tissue. Just in case, going to a real butcher instead of taking a chance at the supermarket was supposed to not have this problem. Surprise. I can't even give him the benefit of the doubt and I tried. No self respecting cook would ever use this things in a sauce or a soup. I've cooked purchased, pre-cooked, bacon once before for BLTs but really didn't pay that much attention to it other than the fact it cooked quickly without grease everywhere. Last night, I really got a chance to eyeball it. When the box says to cook it til crispy, it really means to cook until dry. There's a difference. lol I didn't use it. So, prosciutto wouldn't be a good candidate for rumaki. Pancetta would, though. I didn't use pancetta because I wasn't quite sure how it would go with the marinade and other stuff I was making. Comments (22)Yes, this is for the kids. My oldest has lunch after fifth hour so he really needs a hearty breakfast that will stay with him for a little while. I made the bacon last night and froze it in papertowels. I zapped it this morning and it tasted good. I baked some of the cinnamon rolls in a can to go with it and gave him a glass of juice. My other two kids had sliced apples. Ds also requested barbeque saandwiches so I cooked up a roast, shredded it, and froze it in portions. If we put it in the fridge the night before, it should be easy to add sauce and zap in the microwave. I think I'll do up the French toast and pancakes this weekend. I asked ds about sausage, but he isn't such a fan of that. We are going to do an assemby line for the burritos, but I still need to buy freezer paper. If you have any more ideas, keep them coming. Comments (22)Another yes here, wouldn't do it any other way. No flipping, no spatters. I usually put my oven on 310° unless I'm pressed for time because it stays more flat at the lower temp, which helps it cook more evenly. More fat renders out before the meat part gets too hard. If you like sweet meats, try baking brownsugar onto bacon. Sprinkle as evenly as possible, then pat it down so it all looks wet. Bake as usual. Candied bacon.
