kitchen lighting

We have diy our kitchen remodel. We live in an older manufcatured home with a small awkwardly shaped galley kitchen. We knocked down the wall and now have an open concept kitchen. we have a 10 foot x 4 foot kitchen island with a stove right in the middle of it. the kitchen has and existing flourescent lighting in the middle of the ceiling and pendant lights over the sink on the oposite wall. I would like to change the light to a spider light in place of the flourescent light but i'm afraid that will not emit enough light. Also how many pendant lights should i add over the island without cluttering (b/c then that would defeat the purpose of open concept lighting) and where should they be placed? there is no vent over the stove and there wont be. We bought one but again, it defeated the purpose of open concept. My ceilings are low. I do not want recess lighting either. HELP please with this design dilema.
