Help me find the most durable, functional industrial faucet?

I have been reading and reading on here and am hoping for some specific answers.

We're remodeling our kitchen and are very function over form. We like the coil-over look of the commercial type faucets.

This is what I'm looking for:

1. Solid brass construction with ceramic disc valves (unless there's something better?).

2. Stainless steel exterior

3. If possible, I'd love it if the water can be left on when in spray mode and only have it come out when activated (like actual commercial faucets).

4. We have the Kraus KBU10E sink, and will mount the faucet on the right side, so I would love enough reach to clean the left side of the sink.

5. Ideally 20-25" tall. We have a small kitchen so I'm a little apprehensive about Kraus' 32" one.

Is there a faucet out there for me? I don't understand why this is so difficult. I don't want anything fancy, just good and what it's supposed to do. Price doesn't matter if I'm happy with the quality.
