Help! 27 9/16" Lacanche Range in 30" Gap? How to Fill?

Hello! We currently have a 30" range that has stopped working after many years. We would like to replace with a Lacanche Rully range. However, this is a French company and therefore the sizing is non-standard: it is only 27 9/16" wide. This leaves approximately 1.25" on both sides of the range, which is both impractical and unattractive. The countertops are black soapstone. I was thinking of filling the gap with some sort of fireproof material (fireplace ceramic fiberboard?) and then trying to cover the edges (front and top) with soapstone molding somehow. Is this a crazy idea? Any other suggestions? Thanks in advance!
