Comments (2)I think the best beddings are made out of something dry and primarily carbon. Paper and cardboard are well used because of that, and because it is free. I don't know much about spanish moss, but would assume it is still alive when you pull it off the tree, essentially becoming a food source as opposed to bedding. Comments (19)Today I had some of Mom's Spanish Bar cake that I had asked her to make - the same recipe Nancy made above. It was pretty darn close to what I remember the A&P Spanish Bar tasted like. It was moist, spicy, and delicious. The glaze was good (mainly because I don't like heavy, thick frosting on cake) but it wasn't the same frosting/icing that the A&P made for their Bar. My sister suggested the recipe for the filling that goes between oatmeal cookies and whoopee pies? But that is usually made with shortening and I don't know if I can face that. Just the thought of shortening lately makes me feel nauseous. LOL! It's funny, but my sister didn't remember the cake until I told her about the icing on top and the ridged decoration that was done to the top of the cake. She's 4 years younger than I am. Comments (4)Is this the main dish? Or a side to other dishes? If it's a side, I would estimate a cup of rice to feed 5 people, and 1/4 cup of chopped onion and 2 T chopped green onion per cup of rice, and a can of tomato paste per every 4 cups of rice. Approximatly! When you cook in those quantities 1/2 cup of onion more or less makes no difference at all. So for 70 I would estimate 14 cups of rice...but make it 15 just because that's a nice even number. There are 2 1/2 cups of rice per pound, so figure 7 pounds of rice to serve 70...but add another pound. Use 8 pounds of rice. I would plan on cooking it in 2 big stock pots for ease of stirring. Chop onions enough to make about 4 cups chopped...likely 5 pounds would come close enough....and 4 green peppers. Divide between the 2 pots and sautee each batch in about 3/4 cup of vegetable oil. Add a T. of chopped garlic to each pot. When soft....add 4 pounds of rice to each pot, stir to coat with oil, and add 4 quarts of liquid. I would use a food service can of chopped tomatoes for each pot. Measure the liquid and consider that that part of the 4 quarts...I would add 2 of those quart boxes of chicken broth to each pot and make up the rest in water....then toss in the chopped tomatoes. and add 1 1/2 cans of tomato paste to each pot....that's 3 cans over all....then season to taste....you will need more salt...but remember the broth is salty so start with a tablespoon in each pot....and about 2 teaspoons of ground cumin in eash pot....and I would add about 1 T of a hot pepper sauce like tobasco to each opt. Add the spices before the rice is cooked so they mix well with the liquid. Cook slowly, stirring often uneil the rice is tender. Depending on your rice, you may have to add more water.....or you could use tomato juice. Then I like chopped cilantro added just before serving. Comments (3)We had a major discussion of this treat a while ago! In the opinion of my mom, my sister, and me this recipe is very close to what we fondly remember as A&P's Spanish Bar. Spanish Bar 2 c. flour 1 1/2 c. sugar 1 1/2 t. baking soda 1 TB cocoa 1 t. cinnamon 1 t. salt 1 t. nutmeg 1 t. allspice Add: 1/2 cup oil 2 cups applesauce 2 eggs 1/1/2 cups raisins Mix the first 8 ingredients together in an electric mixer; mix well. Add next 3 ingredients. Raisins should be added last. Bake at 350 degrees in a 9x13-inch pan for 30-35 minutes (tube pan 40-45 minutes). Top with glaze: 1 1/4 cups powdered sugar 1/2 t. vanilla 1 t. lemon extract 1-2 TB hot milk Mix all together and put on cake while still warm.
