Shambo, I know I'm a week late, but I got a tip...I thought it was from Lindac here...to do it exactly as she just described above...but FIRST...dry off the meat with a paper towel. If I've had the presence of mind, I usually soak the chicken (or pork) in milk (or buttermilk) and seasonings. When I'm ready to cook, I dump it all into a colander to drain. Then piece-by-piece, I pick one up, dry it off with a paper towel, then flour, egg dip, crumbs and set it on a greased rack over a cookie sheet for oven "frying." It's more labor intensive, but it keeps the coating on the chicken!! It works!

Please let us know how the french fries turn out, jrueter! Also, if you try fresh pizza, I would love to know the results. I ordered a convection microwave as well(panasonic), I can't wait to use it!! (I bought it mainly for my husband, he loves making pizza!)

We just finished watching the first episode of this season's Blacklist and thought I'd check back while setting up for Castle. Shirley, here's the recipe. Easy-peasy and delicious! Pam, you could have been here, as usual I made enough to feed at least 1 more person! Oven âÂÂfriedâ chicken Preparation time: 15 minutes Baking time: 20 to 25 minutes 1/3 cup dry unseasoned bread crumbs 2 teaspoons sesame seeds 1 1/2 tablespoons grated Parmesan cheese 1/4 cup fat-free mayonnaise (not salad dressing mayonnaise) 1/4 teaspoon salt 1/8 teaspoon garlic powder 2 dashes cayenne pepper 1/4 teaspoon poultry seasoning 4 (4 ounces each) boneless, skinless chicken breast halves Cooking spray Preheat oven to 425ðF. Place bread crumbs, sesame seeds, and Parmesan cheese in a large zip-top bag and shake gently to combine. In a small bowl, whisk together mayonnaise, salt, garlic powder, cayenne pepper, and poultry seasoning. Using a pastry brush, coat both sides of each piece of chicken with the mayonnaise mixture. Place chicken, one piece at a time, into the bread crumb mixture in the zip-top bag, seal, and shake to coat chicken well. Transfer chicken to a foil-lined baking sheet coated with cooking spray. Spray chicken evenly with cooking spray. Bake for 20 to 25 minutes or until juices run clear and chicken is no longer pink in the center. Yield: 4 servings

We normally have a quesadilla on Saturday night and popcorn later, but instead we attended our annual high school Alumni Banquet (just over 200 in attendance). It always includes what I call "old people food" and was catered by a local food market. There were 2 attendees from the 1936 80-year class. Our former principle attended- 97-years old, and science teacher - 88 (both live easy walking distance from the school). Menu: Chicken Fried Steak, Meat Loaf, Smoked Pork Mashed Potatoes, Hash Brown Casserole, Rice Pilaf Green Beans, Corn Fruit Salad, 7-Layer Salad Rolls & Butter ~~~~~~~~~~~~~~~~~~~~~ We wait for Colorado peaches in the summer, which are sold in a hotel parking lot once a week during peach season. Otherwise I use frozen and freeze-dried peaches, and an occasional can of spiced sliced peaches.
