last modified: 8 years ago

On extended holiday out east. Stocked up at TJ.

Discovered zhoug sauce in the refrigerated section near the hummus... oh my!

I'm in love.

recipe from the net ...

lasts up to a week if refrigerated

INGREDIENTS

  • 4 medium cloves garlic, roughly chopped
  • 2 packed cups fresh cilantro (about 2 bunches)
  • 4 medium jalapeños, seeds removed
  • 1 tsp fine sea salt
  • 1 tsp ground cardamom
  • ¾ tsp ground cumin
  • ½ tsp red pepper flakes (or more to taste)
  • ¾ cup extra-virgin olive oil

INSTRUCTIONS

  1. Place the garlic in food processor and process until the garlic is broken into tiny pieces.
  2. Add the cilantro, jalapeño (you can keep the seeds in case you want to kick it up a notch after tasting), salt, cardamom, cumin and red pepper flakes. Process until mixture very finely chopped.
  3. While running the food processor, slowly drizzle in the olive oil. Blend until the sauce is smooth.
  4. Adjust to taste—for a spicier sauce, add the jalapeño seeds or additional red pepper flakes (¼ teaspoon at a time) and blend again. Give flavors some time to marry. Flavor improves IMHO with time.
