CC, this stuff is so good, I was amazed.
Michigan Cherry Sorbet
3 cups pitted tart cherries
1 cup sugar
1/2 tsp almond extract
1/2 tsp salt
Put all ingredients into a blender or food processor and puree. Pour the puree into an ice cream freezer or freezer proof container and freeze. It'll take 6 - 8 hours if you just freeze it in the freezer. i stirred mine a couple of times to make it creamier, but you can just freeze it solid and scrape it with a fork or break it into pieces and give it a couple of pulses in the food processor to make it "slushier".
So easy a 4 year old can do it. Oh, wait, she had help. From her 6 year old sister, who is "better at reading". Yeah, it was that long recipe, LOL. Anyway, I tasted it before freezing and, well, wow. Just wow. I had to take the spoon away from Ashley so we'd have some left to freeze. It's such a nice blend of tart and sweet and the almond extract brings the cherry to the front. I put 5 bags of cherries in the freezer, pre-measured with 3 cups of cherries and a cup of sugar, just to make this sorbet!
