Choosing white quartz back splash to go with Cambria Bellingham?

My sisters and I are helping my Dad on a whole house remodel of a family vacation home in the Rocky Mountains. For the kitchen, the counters are going to be Cambria "Bellingham." We testing out samples of different back splashes and the only thing all the folks liked is plain soft white. The counter has a lot movement, so we are thinking that we want to keep the back splash very quiet. White subway tile is an option, but the grout lines seem to add detail that we don't want. Can we do plain white quartz as a back splash? With that, what happens, when you come to the end of a run, do you bullnose it, or just polish the edge to make it look nicely finished?
