Help! Problems with insurance company

This is a long story, but I'm going to keep it as brief as possible. We had a roof leak and suffered water damage to our drywall and floors. Unfortunately, water also got under our kitchen floor and we began noticing the cabinets warping and the veneer buckling on the bottom of doors.

We've had a professional restoration company measure the moisture under the floor, and determined that this caused the damage. But our insurance company now claims this was due to installation issues.

The cabinets have been there since the house was built about 30 years ago with no issues before this. The insurance company has had inspectors out to our house at least five times since we signed with them years ago, and never raised any issues about the cabinets, or claimed there any problems before this. How can they now claim we're not covered? Any advice would be appreciated.
