Need Help on Backyward Design with Pool!

Hello all. Looking for your wisdom as we start this journey of first time pool ownership. A little background, we are new Tampa homeowners with a two year old and one on the way. We have determined tampa's fantastic, but much better with a pool. We prefer it not to be enclosed however are looking for an enclosable sitting area during bug season. Two areas of questions, pool and patio:

Pool - More easily viewed in the images below. We live on a 58 ft W by 85 ft deep lot, however a slope starts around 28 ft deep. The house is 40 feet wide with a ~26ft x 10 ft lanai in the back. Our initial thoughts are a Roman Salt Water Pool appx. 28ft by 16 ft with a raised spa, ~6ft sunshelf and bench, pebbletec interior, 2 lights (spa and pool), cartridge filter, child child safety fence, with brick pavers. The quotes are between $45-55K. We would love any guidance on design, prices, mechanics, anything!

Patio - As I mentioned we're looking for a transitional safe zone for bug season. The easiest solution would be to add retracable screens on the long end of our current lanai and regular screens on the short end. Ideally I would like to extend the roof about 3 feet our (move the pool back) and then add retractable screens. This would give us very comfortable lounge space during bug hours. The current quote suggests a composite roof extension and retractables for $10k. What are your thoughts on this? Any other suggestions or ideas to achieve a larger enclosed space?
