Need help with backsplash, where do we end it?

We are coming to the end of our very slow kitchen reno at our
cabin. it's time to do the backslash and I'm not sure how far up the
wall behind the stove to take it. The original thought was to take it to
the bottom of the hood fan with a finishing cap. The other thought was
to take it to the ceiling but I don't think it would look right because
the vaulted ceiling on one side of the kitchen. I've included a
picture to try and explain what I'm referring to.

My second question is about a section of wall that has a butcher
block counter, no upper cabinets but three small shelves. We could
leave it with no tile, tile part way up to match the bottom of the other
cabinets or tile all the way to the ceiling. Any ideas would be so
