v-groove ceiling stain, paint, white wash?

We are have a new build. The dining room has a big vaulted ceiling and we are going to install v-groove. I was originally going to paint it the trim color (Benjamin Moore white dove) but The spruce is so pretty I don’t want to waste it by painting it. We have messed around with white washing sample board but the natural wood color comes through too much and it looks fake... my husband thinks we need to stain it gray and then White wash over it. My parents think we should stain it! I don’t know what to do! What do y’all think? I have white dove perimeter cabinets and java stained island. The house is very traditional feeling with a touch of farm house. Some lantern light fixtures. The red oak floor will be stained special walnut. The light fixtures is getting an antique white milk paint ... my husband just tacked it up there with a strap so I could see how it fit in the room. What do I do to the Vgroove ceiling?
