Advice for repairing/repointing old stone foundation.

Hi, I have 1880 house with fieldstone foundation that is cracked and crumbling. We are getting different ideas of what is necessary for these old walls.

Is waterproofing/parging with skim coat necessary? yes, it looks pretty but also covers up all the old stones.

We don't really have a water problem in the basement so we're not installing a drainage system. just pouring a concrete floor.

One guy wants to power wash the old mortar out and another guy says NO! to water and uses an electric drill to get all the mortar out and then fills with new stuff so that it penetrates deep into the wall.

Any suggestions or anyone you can refer in the Boston area would be welcome. Thank you!
