Hate to be so cryptic, but it really depends on the style of the fixtures in comparison to the scale/look of your kitchen. The ceiling height is also helpful. Personally, I prefer the rule of odd numbers aesthetically, which is that anytime you have a grouping, odd numbers look better than even ones. So if you have pictures of the fixtures you're considering as well as photos of your kitchen, that would help in making a determination.

My kitchen island was similar length and 10’ ceiling. I used 3 11” wide oval pendants and it was perfect spacing

Hmm. I might consider simply putting one large pendant centered over the "table" portion of the peninsula. Multiple pendants might not work because you'll have to clear the door swing of the wall cabinet adjacent to the sink. My two cents.

Either way is good but it depends on a few things such as whether one wishes to have a less cluttered look and size More importantly is the wattage

Yikes! I forgot to mention the cabinets to the right of the sink are going away and in its place will be two or three floating shelves so the door swing of the cabinet won't be an issue. But, I do like the idea of one large pendant centered over the table part like you suggest.

If you are going to have a table at the end of the peninsula I would do one large light over that table area. 62" table area will leave a 16" pendant looking wimpy. Id bump it up by a lot. In fact a chandelier might be more appropriate size wise than a pendant.

Either way, Marni, I think a centered pendant over the table will be more visually pleasing rather than a linear configuration of multiple pendants. If you want a "layered" look, you can go with a single fixture that has staggered multiple height lamps, like these, as an example:
