Poked hole in ceiling drywall..to discover plaster ceiling

So, we have owned this old 1920's craftsman house for awhile and are just now getting around to restoring it. Apparently, in its day, it was a "show house" or a special house on the block. Unfortunatley, in the 70's the owners decided to rip out a lot of the original trim and doors and put in cheap particle board type faux wood and added in drop ceilings and paneling in the former drawing room and laundry room. I had also noticed they removed the crown molding in the downstairs rooms as the upstairs rooms do still retain the original crown molding.

Anyways, so I was poking around the ceiling in the dining room to see if maybe the previous owners covered up previously exposed and refinished beams..which I did not find. However, I noticed there is plaster (?) above. Could this be the original ceiling? Are those wood planks not ceiling joists?




I'm not very knowledgeable in this area so this is why I'm asking here!
