Help! Need fruit-set tomatoes to grow faster!

Thanks for taking the time to read! So I have a small indoor greenhouse where I’m growing beefsteak tomatoes, sweet basil, mint, and long Italian eggplant. For the tomatoes a bunch of fruits have set (up to 1” diameter) and a ton more flowers bloomed. I was hoping to have tomatoes ready by Dec. 22 for some Xmas recipes but it seems evident that’s too soon. My questions are 1) How can I speed up growth of already-set tomatoes, and 2) When is the earliest I can force-pick and ripen off vine without seriously comprising flavor?

· Six tomato plants in containers, two of which I have topped off

· Allowed one sucker to grow on each of two plants, the rest and all low foliage pruned

· Using ample red/purple/blue spectrum grow lights

· Using manual pollination via electric toothbrush, seems to be effective

· Keeping temp ~68-84 daily cycle, humidity varies from 50-70%

· Watering thoroughly once every 4 days or so

· Soil is slightly acidic and sufficient in potassium/phosphorous/nitrogen

· Feeding tomatoes Big Bloom and 5-5-5 fertilizer weekly
