Kitchen table top -- best finishing for durability

I purchased a new table top in unfinished maple with the intention of finishing myself using General Finishes Milk Paint followed by 3 to 5 coats of their High Performance Top Coat. I want it to be white. GF has recently said that even the HPTC can yellow with time. It is now suggested that their sprayable only product Enduro White Poly be used instead. It supposedly won't yellow. I can spray using an HVLP in a spray shelter, but I am curious if anyone has other suggestions for products other than GF. I will NOT use a house paint like Advance as from my limited experience it will not be sufficient for a high-use top that will see food and beverage (coffee, WINE!) stains.

If I don't DIY because no matter what I cannot get durability I want, then I will have a pro refinish in their shop. What finish would you then recommend? Conversion varnish, lacquer, etc.?
