Ideas for simple low-carb/low-fat/wheat-free meals?
Comments (9)Dips, dips and another dip! Years ago i self-appointed to be the designated chef at family gatherings...both families, and full of real, imagined, self-inflicted, moral, or just plain attention seeking dietary needs. (one year my niece and nephew, 6yrs and 12, announced vegan, lol) For game-side i would make dips with every dipper veg available. I ended up getting the list for different diets and made stuff up. Actually ended up being not much different than what we eat with a few adjustments...for example, a humus without beans.... 4 cups peeled & chopped raw zucchini 2 cups roasted califlower, chopped (optional) 3/4 cups tahini (sesame paste) 1/2 cup fresh lemon or lime juice 1/4 cup olive oil 4 cloves of garlic, peeled 2 teaspoons kosher salt (or to taste) 1 Tbl ground cumin tender center with leaves of celery cilantro with stems, to taste -puree in blender A salsa, a bana coda, a goat cheese pesto dip...i use my harvested roasted toms with veggies from the freezer and add lime, cilantro, and red onion when thawed for salsa. I have even included the recipe under the serving bowls, lol. So tired of all the questions of ingredients,...(after a few days when everyone turns kook.) Cooking keeps me out of the chatter for the most part. I make a ton of each, have serving bowls prepped and ready but have back-up quarts for re-filling if needed. (and good left-overs if one dip is not so popular) I like the chicken strips on skewers idea and maybe shrimp. Prepped ahead and popped in the oven if something warm is needed. With a nice Asian nutty sauce. (roasted pumpkin seeds?) A family favorite is tortilla pizza. Low carb, gluten-free, this and that tortilla options in a health food store. Many options for toppings and can be chosen for each diet individually. I prep all ahead in the morning...onions mushrooms simmered, roasted peppers and veg, a variety of cheeses, different meats...a mandoline is key for a thin edge of potato or sweet potato. The tortilla is thin and gets crispy quickly. Not a dough thick pizza...more about the toppings. Seems to please everyone no mater the diet issues. A prosciutto roll up with cheese and veg on parchment is a no crust option. This one is asparagus, mozz, tom and arugula with pesto under the thin potato edge. -my personal favorite is onion, gorgonzola, prosciutto, artichoke heart with an egg, (broken yolk) cracked on top. : )...with a pesto potato edge. Comments (137)Thanks! Oakley -yay for Aquage! That brush looks amazing. Funkyart which style do you think runs wider? My feet feel much better. My left foot doesn’t hurt at all anymore when I have them on. The right foot still does but I suspect it will take awhile for that foot to settle down. I really need a pair of comfortable (standard work with almost anything black) boots/booties but don’t really like their styles. Theres one that’s ok but I wish the toebox was shaped a little different. Going to order more sandals. Im going to look into some of the other sandals mentioned here too. Thanks Eld. Yeon -The small bottle (they have a large size too) has a dropper and I just put a drop on the applicator and run it along the top. Another drop for the bottom and drop right at the beginning of the spooly brush to use on my brows. It sounds like a lot but I have over half a bottle still. I don’t recommend brushing the oil on the lashes with the spooly brush (mascara wand) because the oil is so thick it just beads up. It’s kind of gunky feeling but doesn’t irritate the eyes at all. I do it right before bed and sleep with it on. In the morning I just rub my eyes. It seems some of its absorbed in because there’s less. ETA - Thanks for suggestions about exercises. I was thinking there was probably stretches or something I could do to help. I'll check it out. Justerrilynn -They look great! And nice ZZ plant too....See MoreLow Carb Bread?
Comments (15)I am on a low carb and gluten intolerant. I use this and it works out good and you don't need all those extra expensive ingredients. It makes a brown bread not a white one. I triple the recipe to make 8 buns or a loaf of bread. 1/2 cup plus 1 tablespoon flax seed meal 1 1/2 teaspoons onion powder (opt) 1/2 tsp salt 3/4 teaspoon baking powder drop or 2 of stevia. ( I use about 1/2 teaspoon of powdered splenda in mine) 3 eggs 1 1/2 tablespoons water 1 1/2 tablespoons olive oil Mix all ingredients together. I let side for 5 min for the flax seed to soak up some of the liquid. Pour the batter into greased muffin top pans for hamburger buns filling 3/4 of the way up or into bread pan. Bake 325 15-20 minutes. I usually bake the buns because I put them in individual zip lock bags and freeze. I just pull one out of the freezer when I need one. PS If there is a Chinese grocery store near you, they carry a lot of different kinds of alternate flours. PSS Ground up pork rinds makes a good binder in meat loafs and if you add parm cheese and seasoning salt it makes a good breading for chicken....See MoreBest advice you received in 2022?
Comments (60)I didn't receive any advice or read anything new in 2022, but from reading this forum the most valuable part to me which I learned the importance of in 2022 was the advice of getting rid of things and not leave it to my heirs to deal with. This advice really hit home for me here in December and since dealing with two houses in a different country one where this was done (and still lots of stuff) and one where it wasn't I'm making 2023 the year of reducing the stuff we have. I also learned the hard way that some things that I need to remedy for my family after dealing with it in another country and although the law there is a little different the same issues are in the US as well and I think even harder to deal with here due to less automation after someone passes away. I wish I had known more about this and pushed it more with my family as things are complicated since my mom has Alzheimer's and my stepdad passed away just a short time after a diagnosis and two weeks later my dad also passed. I've suddenly faced some real medical problems (some unknowns at this time) and will take care of this myself as well, although I still hope my medical issue will turn out to be something simple vs. the worst case scenarios. I'm dealing with cognitive issues and horrible memory loss and I'm only in my early 50s. 1. Highly recommend creating a durable power of attorney for someone to handle your finances if you're unable as well as any medical. I know in Texas these are separate so I'm guessing it may vary from state to state. 2. Make sure your will and testament has a person assigned to handle the estate and make sure you have a will and testament. 3. Also if you have underage children make sure to cover what will happen to them in the event of something happening to both parents. Assign a legal guardian in your will (or whatever your state/country requires) and an order of people in case something has happened to them as well before something happens to you (particularly if the first choices are grandparents). This avoids the children having to go into temporary foster care before things are sorted out....See More- 7 years ago
