Solutions for botched level 5 drywall and paint

We requested and paid for a level 5 drywall finish. Level 5 is not common in our area, knock down is the standard finish. Drywall was taped and primed, at that point we started pointing out issues they fixed some and with other issues they said that the paint would hide the rest. Being stupid homeowners, we believed them.

Painter finished last week. Paint made the imperfections stand out more. In addition to that, the painter did a crap paint job, over sprayed some areas leaving an almost orange peel type texture on parts of the walls. There is also really bad flashing taking place and roll marks.

It looks bad; the ceilings are really bad and show obvious drywall tape lines, we spent over 3 hours yesterday circling the areas that needed to be fixed before giving up.

Our builder is great and says that they will do whatever need to be done to get it right.

Our concerns are that if they try to fix it they are going to make it worse because they clearly don't know how to finish to a level 5 and paint a smooth wall.

Not sure what we should do, any ideas? Our house is contemporary, is there an alternative texture to knock down that would work in a contemporary home that might be easier to achieve then a level 5.
