Where to put Prep Sink and Garbage?

So, these are some very preliminary drawings. After talking to our contractor, we've made a lot of changes to our renovation plan, which results in the need for a new kitchen plan. And rather then troubling my poor kitchen designer for the 100th time, I thought I'd run it past all you experts first.

Where do I put the prep sink and pull-out garbage in the island? I'm thinking the prep sink should be across from the fridge and the garbage across from the dishwasher?

Also, what's the best solution for the bottom corner cabinet?

You don't want your prep sink to be across from a different work station (is: stove) because then you will be bumping butts with the other person in the kitchen. The prep sink is its own work station so across from the fridge is a great location.

For the garbage - think about how you cook and prep. What do you throw away? (ie: wet vegetable peelings are not something you want to walk across the floor with).

I'd put an 18" drawer stack across from the DW, for utensils, then a 24" prep sink, with an 18" trash pull-out on the other end, convenient to the DW, cooking zone, and fridge. That will also leave you a nice prep space--you can scoop from the counter, and pivot to drop prepped items on the range. If your aisle is at least 48" wide, it will be sufficient for two workers.

You could use a 36" super susan in the corner base, with an EZ-Reach upper instead of the diagonal cabinet.

The sink isn't a huge one. I should have room behind for the faucet. If I posted pics of the progress you would think I'm crazy. The house looks much worse than you'd imagine. My whole house has to be replumbed. There is a giant hole cut in the floor, and old waste pipes are laying all over the bare car decking. It almost makes me cry to see it. Thanks flwrs. I'm hoping the end result is worth all the stress.

Do you compost? If so, you may not need a disposal in your prep sink. Otherwise, you probably will want one. One of my regrets (albeit not a really big one), is that I didn't put a disposal in our prep sink. Originally I had planned to, but when we started cutting items from the budget the GD at the prep sink was cut (the one at the main sink was not). However, I still use my prep sink a lot! The only time I don't is when I peel a large # of potatoes. Otherwise, it's simple enough to gather up the "leavings" and either throw them out or put them in the other sink. I have been considering starting to compost this spring/summer...so maybe it won't be so bad then!

Thanks Rhoome & Kris_ma- I am holding my ground on this sink. Its just that I have a TON going on at work right now and that is more stressful than the kitchen remodel-- and that says a lot!! Rhome- give your hubby a hug from me too!! Because I am ready to kill mine! Normally he is really great, but him iwth this sink issue is just driving me crazy. I know in the end he will let me have it--since I am the one that cooks and this remodel is more of my baby than his. But its difficult having someone second guess you. Breezy- I am with you! I want functional first, pretty second. Not that I think my sink is not pretty but I know I am going to love having it. My old kitchen (I have no kitchen right now) went 12" cabinet, range, blind corner cabinet, 30 sink base 12 cabinet. That was my kitchen! I did all of my prep on that small space between the sink and range and it worked! But it would very odd NOT to have a sink right where I prep. Hopefully the plumber will call back soon!!

The prep sink is likely to be where most of the grinding will be needed. Agree that you need a good one. My Insinkerator, installed 28 years ago and used almost daily, is still operating, albeit noisier than new models. Any of their Evolution series would be good and I'd go for the best model that fits your space and budget.

Does anyone have experience with a prep sink directy across from the main sink? Or across from a fridge on the short end of an island?

And I'll add that it won't be used entirely as a "prep" sink, as much as just a second sink in a very busy kitchen (filling the coffee pot, making juice, etc).

I'm toying with the idea of having two garbages, a small one under the prep sink, where ever that will end up being, and second larger one that isn't in the main work aisle. We have six kids and a very busy house

I have triple trash pull-outs under the prep sink in a 36" cabinet in the
island. This is extremely functional. (The sink actually vents in an adjacent cabinet, to conserve space).

Three drawers: Trash, recycling and paper. New paper bags either go on the
bottom (squished a little I guess) or on the side of the existing paper
bag in use. 9.75 x 15.25 x 18 at the top of the bin. This is tapered,
but works. Note how DH notched the side of the bin so that it fits
under the sink drain.

To the right, is a shallow cutting board cabinet with a paper towel holder at the top. The right most drawer fronts tip down for various sponges/cleaning things; the left most drawer is actually a shallow drawer affixed to the side of the sink, with a composting bin behind it.

Edited to add that the knife drawer is the top drawer on the left most stack. (Can't find a picture).

We store all of our detergents/etc. under the clean-up sink. Having a place for knives and cutting boards at the prep sink, helps tremendously with functionality (and allows for the triple trash solution).

One more edit - I do have another trash pullout under the clean-up sink and highly recommend having a second one. You haven't asked about composting but that's yet another option on the prep sink which I love.
