I have the slightly older Thermador. The door shelves aren't all that and can get in the way of the door closing if you cram the freezer full (and who doesn't?). I like it otherwise. So I wouldn't rule it out for that reason.

Dispenser is good. We drink much more water as a result and don't need to keep a pitcher in the fridge which frees up space there. Nobody seems to mind using two hands. I have a 4 year old boy so everything splatters everywhere all the time but the dispenser is fine when other people use it including my only slightly older girls. The only trouble is narrow openings like a water bottle with a neck. Water can be put in them perfectly fine and comes out ice cold, but the crushed ice (cubes wouldn't fit) doesn't go in those easy.

Capacity seems pretty good but I think you can never have too much freezer space. The dispenser does eat up a lot of space. I have a chest freezer in the basement.

At your level of remodel, skip the freezer dispenser entirely. You will notice s distinct lack of them in upper end products. For a reason.

Put a chilled water dispenser at your beverage sink. Place an ice maker adjacent.

Water stains dribbling down the front of a wood panel or staining a metal panel is considered gauche. Not having a sink in the Butler’s is a big mistake. You need a sink there, a clean up sink and a prep sink in the kitchen, and a laundry or utility sink.

There is no drain there. Just a tiny reservoir to catch some overflow. If you don’t police it regularly, the next time you go to open the door, the centrifugal force will cause the water to leave the reservoir if it’s more than a teaspoon or two. Plus kids. Plus inattentive spouses.

If you want a dispenser on a fridge, you also buy the extra maintenance and repairs that go with it. The ice maker is the #1 service call on any refrigerator brand anywhere.

A built in is designed to be sleek and unobtrusive. Or invisible. Having a giant dispenser in a door defeats that. That’s why there are no 12K fridges with dispensers. At that level, it is s totally separate appliance. In the Butler’s pantry. Or bar. Or beverage sink in the kitchen. Just not at the clean up sink or prep sink.

You don’t want the traffic underfoot interfereing with those functions. In a smaller, less grand, kitchen, the plain Jane standard 36” fridge dispenser is fine. It’s what you expect. Not in a 150K kitchen.
