Birthday cake size update

Not sure how the forum works for updating posts, so I figured I'd start a new one. I posted last week about how to get the most servings out of a birthday cake recipe for hummingbird cake. The whole thing turned out to be a comedy of errors.

First, dad said he didn't want to have the party at my house. I'm living in the folks old house with all mom's china and nice serving trays, dad lives in a condo. Originally I had envisioned setting out a nice birthday buffet in the formal dining room of the folks old house, because it was a chance to take all mom's nice stuff out for a spin. But dad suffers from a whole host of mental issues so when he balked at the idea of leaving his place for mine, even though it is just across town, I didn't argue. So the serving-ware was going to be paper plates and cups anyway, so I decided to make the cake in my 9x13 inch pan since it had a lid and I also have a cake carrier for that size pan. I figured I would just cut small pieces. Was planning on serving it with chocolate ice cream.

Next, we had a major power outage in my town from 9 PM the night before the birthday to 9PM the next night. The party was 5-7, thankfully still during daylight hours here. Oddly, my part of town that is notorious for having power outages, was the only part of town that had power. I toyed with the idea of switching the party to my house, but went over to dad's earlier on, and he still didn't want to change to my house. Was really not all that different than my original plan, which was that I was going to make the food at my house and take it over to dad's to set up. So we basically had a picnic at dad's house. I think everyone enjoyed the party, (including dad, which was a small miracle), and it was good that I didn't try to switch venues since folks may have been hard to get a hold of that day due to various power-related issues. We did have to put candles in the guest bathroom since it didn't have a window, and I had to forgo the ice cream since I didn't have any way of keeping it frozen. The rest I served out of my ice chest and the hot food (sloppy joes, one of dad's favorites) was in a crockpot so basically stayed hot since I insulated it with towels.

As for the cake, it was good but made with a mix so not as good as some of the other times I have made it. However, the cream cheese icing (home made) was way too sweet so if I make this cake for a crowd again, I will do it as a bundt with just a little bit of glaze for show. I need to get a tier cake carrier!

There was enough cake left over (some folks couldn't make it to the party or have more than a bite of cake due to diet restrictions anyway) so that dad could take it to the Senior Center the next day to share with some folks he volunteers with. So two times a hit!
