Backsplash tile pattern opinions wanted

I have a galley kitchen, where the backslpash is going to be around 10 foot in length on the long wall, plus another ~7ish feet as it goes around a corner at the end of the kitchen. There's a possibility it may go "up" one wall around the sink window, but that will depend on how the cabinet layout ends up.

The cabinets will be white, the countertop Verona Calacatta Blanco quartz, the backslpash 3 x 6 Heath Frost tiles. (see pic) The floor is 12 x 12 old terracotta/saltillo tiles.

I am trying to decide if I should do traditional subway, vertical subway, horizontal stacked, or vertical stacked. I've heard that doing a vertical pattern in a long low galley kitchen can make it seem 'taller'.

The pics below show the layout of the kitchen (pretty much staying the same). The kitchen will be all new except the floors. There is currently a ~20" high between countertop and bottom of the cabinet but that will drop to prob 18"
