Evenly heating double griddle....

I have an old Viking range, about 20 years old.
I had a nonstick double griddle (brand?) that did not heat evenly. The nonstick started to flake. So I tossed it.
Fast forward a few years and I bought a cast iron double griddle. It still does not heat evenly. I leave it heating for 10 to 15 minutes or more.
The space in between the two burners is quite a bit cooler than the rest of the cooking surface. Is this the limitation of this system. Am I doing something wrong? What are you using to have evenly heated double griddle on the stove top?
If I buy the Viking brand griddle, will I have a better result?
