Summer Chicken N Biscuit Pie

This is the chicken pie I'm making for Wednesday. I got all of my ingredients from the Farmer's market today so Im ready!

For the crust:

4 c. flour

1 1/2 t. baking powder

1/2 t. baking soda

1 stick unsalted butter, cut into cubes

1/2 c. shortening

3/4 t. kosher salt

1 1/2 c. buttermilk

For the filling:

3 c. shredded roast or poached (or rotisserie chicken)

1/2 c. mayonnaise

4 ears of corn

2 large tomatoes

1/4 c. finely chopped fresh herbs (dill, basil, oregano, cilantro)

! T. apple cider vinegar

2 T. fine cornmeal

3/4 t. salt

3/4 t. pepper

To make the crust: Work together the flour, baking powder, baking soda, butter, shortening, and salt with your hands in a large bowl until the dough is combined, with some small lumps of butter remaining. Add the buttermilk and stir with your hands, kneading gently to combine the dough (the dough is wet and sticky, which makes for a fluffier biscuit) Divide the dough in half. Wrap each half in plastic and chill for 1 hour.

To make the filling: Stir the chicken together with the mayonnaise. Cut the corn kernels from the cobs and place the kernels in another bowl. Chop the tomatoes and toss them with the corn and the remaining ingredients.

Preheat oven to 425.

Roll one half of the dough between two sheets of plastic wrap into an 11 inch round. Remove the otp layer of the plastic wrap, then transer the dough, using the plstic wrap to guide the dough to a 9 inch pie plate (dough side down). Remove the plastic wrap. Roll the remaining dough out the same way and keep it ready.

Fill the pie with the chicken mixture, then top the chicken with the corn and tomato mixture.

Cover the filling with the remaining biscuit dough the way you did before. Remove the plastic wrap and pinch the edges of the dough together by lifting the botom crust up and over the top crust. Cut three steam vents in the top crust.

Bake the pie until the crust is golden brown all over -- 40 to 45 minutes. Let the pie stand for 15 minutes before serving.
