I would think, just like pickles and jam, you can stick it in the frig, and start eating it. It would be good for a couple of weeks.

The jar that didn't seal, refrigerated, would be fine. Plan to eat in
the next couple of weeks up to a month though, mark the date on the lid,
or, you can freeze the jar if you have 1/2" head space and put the ring
on very loosely to allow expansion.

Your local food bank or homeless shelter, even your local church or grade school would be happy to have some of your bounty, give them a call. Here the food bank cannot distribute fresh foods (canned or shelf stable only) but they let farmers put fresh fruits and vegetables outside their doors during the time they are open. They would not take your canned peaches in any case because you do not have a commercial (or an approved home) kitchen, and they would not take home baked or cooked food. You can't say they "organic" if your land is not certified, but you can say "naturally grown" or "pesticide free". There are lots of people who cannot afford to buy a fresh peach so consider sharing your bounty with them.

OMG! I would love to have a problem of too many peaches. Peaches are dear in Wisconsin; can't grow them here and most of the store bought ones aren't even a pale imitation of a good peach. A truck comes thru a couple of times every summer with very good Georgia peaches but they're only parked for a couple of hours on one day so I never know when, where and miss out. Expensive, too.

Every year, I tell my husband that I want to go on a road trip for peaches but don't know where/ when to go and so it never happens.

Mom always froze peaches in a simple syrup & Fruit Fresh. Very next best thing to fresh peaches since they aren't cooked. I loved eating them barely defrosted w/ some ice crystals still in the peaches. She froze them in half gallon sized milk cartons (cobbler portions)...wadded up wax paper on top of the peaches in the carton to keep then submerged and folded the tops down flat and taped shut. (I use an Ace Clipper plier stapler to close the cartons of chicken broth that I freeze.)

Thanks, everyone! Good to know I can hold it for weeks! :) yes, I have a *crazy* amount of peaches!!! I've given bags & boxes to all my friends, neighbors, and relatives, and, nancyofnc, I did take 3 big bags to a local food pantry on Saturday... figured I'd see if they want more this weekend. jasdip, my zucchinis got huge while I was busy picking peaches. I was going to weigh the largest one -- I'll estimate 10 lbs. lol!!! cl_lantro, these are Reliance peaches -- they have a poor reputation relative to other peaches, re size and flavor, but those other peaches won't grow here... and these are dripping good!!! I'd highly recommend them for cold-climate growers! :)

Do you have a farmer's market nearby? Bet people would be very happy to be able to buy fresh, home grown peaches. I know I would.

Partymusic, I did try a Reliance peach tree and it didn't make it thru the first winter. It was one of those really rough winters so maybe I should try again. Yeh, I know the Reliance doesn't have a good rep but I was desperate. (I'm kinda' on the line between 4b and 4a in central Wisconsin. I'd have better luck if I lived just 60 miles east where Lake Michigan moderates the weather a bit. IIRC, it's zone 5 over there.)

We keep losing oak trees to oak wilt so I'll probably have a more sheltered spot open up in a few years. A couple of peach trees would be wonderful to have.

There is, Rusty, but I've never been there -- last year they changed it from Fridays to Weds. (2-7pm) and I'm not sure it's cost effective to rent the "space" and then spend the time there.

ci_lantro, I know what rough winters are like! Maybe you'd have better luck with Contender.
