Ann T - a scone question

  • 2-1/2 cups All Purpose flour
  • 1/2 cup granulated sugar or brown sugar
  • 2-1/2 teaspoon baking powder
  • 1 stick (8 tablespoons) cold butter cut into small pieces
  • 1 cup heavy cream (or whipping cream)
  • 1 cup frozen Raspberries
  • 1 cup mini chooclate chips
  • Mix dry ingredients well. Cut in butter. Mix
    in cream. When the cream is almost incorporated, add fruit, berries or
    nuts. Bake at 425F for 15-18 minutes or until tops are just turning
    golden and centers are set.

Here's your recipe that I've been baking with tremendous success, thank you. This time next week we'll be living in Fort Collins, CO at 5000 feet above sea level. Just to have a baseline, I'm going to bake them the first time exactly the same as I do here in South Florida to see what happens.

But what would YOU change first due to the higher altitude? I'm thinking about an extra 1/4 cup of heavy cream, as everyone I've spoken to says that moisture is the biggest problem. Thanks!
