Beginner Espalier Questions

I have been wanting to try to espalier a few apple trees. But, Lowes had a healthy looking small espaliered 3 varieties grafted tree on sale today. All the varieties looked to be about equal in vigor on this specimen - Liberty, honey crisp, Gravenstein.

Questions: would this be a good way to try out an eapaliered tree? Or would I be setting myself up for failure? Would it be possible to keep this tree to 4 ft across? Is each variety really self pollinating? Because I read conflicting info about this. And the tag says it could grow 15-20 feet tall??
