Question about salt-cured meats

Most of you know that my husband is on a low sodium diet. So to broaden my horizons, I joined a couple of low sodium Facebook groups. Now one of them is debating an "issue."

One member described her procedure to lessen the salt content of her favorite store-bought uncured bacon. She rinses it, soaks it in water, then cooks it. She claims her process removes a lot of salt.

Another member says she's wrong. He said the damage is already done in the curing. The salt has penetrated and altered the protein. The only sodium removed is what's on the surface. Rinsing & soaking doesn't remove the sodium content of proteins that have been cured or salted.

She is using uncured bacon, so she thinks his arguments don't apply. He says cured or uncured, the sodium content remains the same. Osmosis only removes water, not sodium.

I immediately thought of country style hams and bacala. Both need soaking and changes of water over a couple of days in order to remove a lot of the salt. Otherwise they'd be inedible.

So, who do you think is right?
