Help! Don't like my Stain Color

My brand new white oak floors were just stained, and my heart sinks each time I look at them because they just aren't what I was hoping for. I was aiming for either that smoky/almost white European oak look - OR a very natural look with a touch of something (brown? gray?) to tone down the yellow/pink cast of our oak. I loved how it looked in its raw state! We tried lots of samples, and under pressure from our contractor, made a quick decision on a very light version of Provincial (3 clear to 1 Provincial, I think). In our rush, the floor people forgot to sample it with a topcoat. The end result is that my floors look amber - almost orange to my eye. Not at all the light Euro look I was hoping for. Is there any hope for getting to the right color if we re-do these? I don't even know what to ask for at this point. I'll post pics in the comments. Thanks!!
