Comments (13)This is the recipe I used for my corn casserole. Sweet Corn Casserole 1 - 15.25 oz. can of whole corn drained 1 - 15 oz. can cream style corn 1/2 cup white sugar 1 egg beaten 1/4 cup butter, melted and divided 2 sleeves of buttery crackers, crushed and divided, I used Town House Preheat oven to 325 degrees. Stir drained whole corn, cream corn, sugar, egg, and 3/4 of the butter together along with half of the crushed crackers. Place in a greased casserole dish. Add other half of crackers with the rest of the butter to the top. Bake for 25 to 30 minutes or until the top begins to brown. If you want to double this recipe then it will fit a 9 X 13 pan. Comments (36)Sally, Ann T's chocolate meringue cookies are good and have no flour, so they can easily be made gluten free using the appropriate ingredients. Macarons are also naturally gluten free, made with almond meal, but they are fussy. I can also heartily recommend this lemon bar recipe, I made it for Amanda and it was so good that no one even knew it was gluten free. She had to sneak a couple to hold back so she'd have some for her work snack! I got it from a blog called "Faithfully Gluten Free". Gluten Free Lemon Bars (the Way Lemon Bars Should Be) Author: Jeanine Friesen Ingredients For the crust: 1 cup unsalted butter, at room temperature 1/2 cup granulated sugar 2 cups all-purpose gluten-free flour blend (see Note) 1/2 teaspoon xanthan gum pinch salt For the Filling: 7 large eggs, at room temperature 2 1/2 cups granulated sugar 2 tablespoons grated lemon zest (4-6 lemons) 1 cup freshly squeezed lemon juice (I needed 6 lemons to get 1 cup) 1 cup all-purpose gluten-free flour blend (see NOTE) Confectioners' Sugar for dusting Instructions Preheat oven to 350 degrees F. Line a 9x13-inch baking pan with parchment paper, so the paper rises up the sides (I had it run up the 13" sides, and left the 9" sides bare). (This will make removing the squares much easier, as you can lift them out once they are cooled.) For the crust, in the bowl of a stand mixer, cream the butter and sugar until light and fluffy. Combine the flour & salt, and slowly add to the butter/sugar mixture while the mixer is on low. Mix just until it is combined. Dump the dough into your 9x13-inch pan, and using hands dusted with gluten-free flour, press the dough evenly over the bottom of the pan, building up a 1/2-inch edge on all sides. Bake in preheated oven for 20 minutes, or until very lightly browned. Remove from oven and cool on wire rack. Leave the oven on. While the crust is baking, you can prepare the filling. For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and gluten-free flour. Pour over your pre-baked crust and bake for 30-35 minutes, until the filling is set. Let cool to room temperature. To remove from pan, cut along 9" edges, and use the parchment paper to lift the bars out to a cutting board. Using a sifter or wire sieve, dust the top of the bars with confectioners' sugar. Cut into squares, and serve. Notes The all-purpose gluten-free flour mix that I use is from Cybele Pascal. It is as follows: 4 cups superfine brown rice flour, 1 1/3 cups potato starch (not flour), 2/3 cup tapioca starch. Adapted from The Barefoot Contessa Cookbook. Comments (30)I've had the urge for an Apple Crostata, and Empires and Cortlands are my favourite apples. Boy I wish I lived closer to you Alsisande, your apples look wonderful. I'm in apple country, but they're still pricey. I'm going to have to bite the bullet and get some regardless. Nicole, I always put molasses in my bran muffins. It also calls for buttermilk, and I combine yogurt and milk to make buttermilk. It works perfectly, as we always have yogurt in the frig. I didn't do any baking this weekend, I made bread last weekend and we still have some. But I have chicken thighs that were marinated in lemon juice, garlic and lemon zest. Comments (8)On the baking agenda are cinnamon rolls, a couple of types of fruit breads, a couple of coffee cakes, Spanish Bar cakes made in mini loaf pans for convenience, dark chocolate amaretto bundt cake, two types of Rice Krispie treats, stick pretzels dipped in an icing then decorated with sprinkles, no bake chocolate oatmeal cookies and peanut butter buddies for the puppies. I try to do the fruit breads in both regular loaf pans and the mini loaf pans to cater to the widows and widowers or people who just want to buy a little bit of several things. Plan to do the cinnamon rolls in family size and maybe plop some individual ones in the little pot pie pans. This is my goal. Joann had the 18 cell miniature loaf pan 50% off this past week at $12+. I really shouldn't have, but did buy one. Well, the Marans are a little more confident in themselves, it seems, and the poor Buffs are pretty timid. Noisy little things, but they are calming down and I'm working on getting them use to me. I love peeking in at them and seeing them falling asleep standing up or drilling their beaks into their crumble. Niece an her two kids are coming down to see them Sunday. I will still try to get a couple of Black Copper Marans, hopefully already laying and some Buckeyes to start breeding. There will be too many eggs for me so I will donate them each week to St. Vincent de Paul to distribute to those who go there for food.
