Comments (13)Michelle, The recipe comes from a new cookbook I bought at Costco just before Christmas...gotta love that Costco and all their special deals during the holidays! Its called The New Best Recipe from the editors of Cook's Illustrated. I love this book and ordered 2 more from Amazon for b'day presents. Chewy Oatmeal - Raisin Cookies 1-1/2 cups (7-1/2 oz) unbleached all-purpose flour 1/2 tsp baking powder 1/4 tsp freshly grated nutmeg 1/2 tsp salt 16 tblsps (2-sticks) unsalted butter, softened 1 cup (7 oz) light brown sugar 1 cup (7 oz) sugar 2 large eggs 3 cups old-fashioned rolled oats (not quick) 1-1/2 cups raisins Prehead oven to 350 degrees. Line 2 large baking sheets wiht parchment paper or spray with nonstick cooking spray Whisk the flour, baking powder, nutmeg and salt tegether in bowl. Beat the butter on medium speed until creamy. Add the sugars, beat until fluffy. Beat in the eggs, one at a time. Stir the dry ingredients into the butter/sugar mixture with a wooden spoon. Stir in the oats and raisins. Make generous 2 inch balls and place 2 inches apart. Bake until the cookie edges turn golden brown, 22 to 25 mins. Let cool on pan for 2 mins and then transfer to rack to cool. *I used cranberries in place of the raisins The recipe said they didn't add cinnamon because it distracted from the flavor of the oats. If you want a less sweet cookie, use 1/4 cup less sugar but you'll lose some of the crispness. I used an ice cream scoop. They said a smaller cookie would be dryer and more cake-like. Comments (30)I've had the urge for an Apple Crostata, and Empires and Cortlands are my favourite apples. Boy I wish I lived closer to you Alsisande, your apples look wonderful. I'm in apple country, but they're still pricey. I'm going to have to bite the bullet and get some regardless. Nicole, I always put molasses in my bran muffins. It also calls for buttermilk, and I combine yogurt and milk to make buttermilk. It works perfectly, as we always have yogurt in the frig. I didn't do any baking this weekend, I made bread last weekend and we still have some. But I have chicken thighs that were marinated in lemon juice, garlic and lemon zest. Comments (8)On the baking agenda are cinnamon rolls, a couple of types of fruit breads, a couple of coffee cakes, Spanish Bar cakes made in mini loaf pans for convenience, dark chocolate amaretto bundt cake, two types of Rice Krispie treats, stick pretzels dipped in an icing then decorated with sprinkles, no bake chocolate oatmeal cookies and peanut butter buddies for the puppies. I try to do the fruit breads in both regular loaf pans and the mini loaf pans to cater to the widows and widowers or people who just want to buy a little bit of several things. Plan to do the cinnamon rolls in family size and maybe plop some individual ones in the little pot pie pans. This is my goal. Joann had the 18 cell miniature loaf pan 50% off this past week at $12+. I really shouldn't have, but did buy one. Well, the Marans are a little more confident in themselves, it seems, and the poor Buffs are pretty timid. Noisy little things, but they are calming down and I'm working on getting them use to me. I love peeking in at them and seeing them falling asleep standing up or drilling their beaks into their crumble. Niece an her two kids are coming down to see them Sunday. I will still try to get a couple of Black Copper Marans, hopefully already laying and some Buckeyes to start breeding. There will be too many eggs for me so I will donate them each week to St. Vincent de Paul to distribute to those who go there for food. Comments (13)I'm working on food for a baby shower my DD is hosting tomorrow afternoon. Today I baked cupcakes and brownies, pate a choux, and a salmon filet for mousse. When the salmon was 10 minutes away from being done, the electric went off, so I left it in with the door closed, and it was fine. The mousse is chillin' in the fridge. While the salmon baked, I was pounding butter for puff pastry, so I stuck that in the freezer, after being assured by the voice on the phone, that the electric would be back on within the hour. Tomorrow I will bake egg puffs, cream horns, and pastry sticks to go with the mousse. The choux will be crisped in the oven before being filled with cream cheese and ham spread. I'll fill the cream horns and frost the cupcakes, in between rolling and baking. I also plan to make a fruit-filled watermelon 'baby carriage', for a centerpiece, and slice cucumber chips for the mousse. My DD volunteered to make individual hummus and veggie cups, and the lemonade. It's almost time to roll out the puff pastry again, and I just noticed that the battery icon on my laptop has a red X on it, as if it isn't charging.
