Sheet mulching around baby fruit trees

Hi Everyone,
I'm converting more of my lawn to beds in hopes of building apple tree guilds. The apple trees that I have now (which are already planted) are 1 or 2-year-old whips. That means that they're only about 3-4 feet tall and basically look like sticks. Around the apple trees is lawn (with a few dandelions and other weeds).

I would like to sheet mulch the area so that next year I can start planting out the guild. I am familiar with the basics on sheet-mulching but I also know that you shouldn't deeply cover a tree's roots (especially baby ones?) because they won't get the oxygen that they need and the planting depth is correct right now without the extra material. How close can I sheet mulch around these trees?

Also, I am in a city. Does anyone have any clever tips on how to collect the massive amounts of organic material that I will need? We have no mature trees in our yard.
