Pulled pork in roaster oven?

Hi -- we had a little get-together the other day with BF making pulled pork and me making the rest. I suggested he use my 6.5 qt roaster oven, which he did... he's not happy about it. :(

I believe his usual method would be to use a slow oven (225F), open roasting pan, with the pork raised on a rack and some water in the roasting pan. He attempted something similar with the roaster oven -- he tried to keep the lid 'cracked' with a piece of folded aluminum foil. :p

How should the roaster oven be used to make a decent pulled pork?

ETA: I always pull out my homemade limoncello at dinner parties, which I did. But I also pulled out my homemade creme de menthe... o m g! go homemade!!!
