Tahitian melon squash is ripe ... when?

I'm growing Tahitian melon squash this year, based on recommendations I've heard. I grow a lot of Moschata, but never tried this one. So far, I'm really impressed. The plants are enormously vigorous, taking over a bed, and flowering up the kazoo. I have several squash already. I'm looking forward to neck pumpkin squash (which are culinarily more convenient) with a high sugar content.

So the question is .. when is it ripe? Is it like Butternut, that green gives way to rusty orange? In Butternut, you wait for stripes to disappear, then pick. Are there any advantages in harvesting early, and treating like summer squash? I gather that it stops ripening when nighttime temps dip below 60F, and if you pick it early and store it will eventually mature off-the-vine. I gather that the sugar content is highest for mature fruit, however.
