Comments (23)Oh. No, Karen, you don't want that one with induction. For induction you want single sided that's flat on the bottom, rather than anything that has a ridge on the bottom. My double sided griddle/grills will heat on my induction, which has a very generous pot detector (they don't on lesser models), but the air underneath gets very hot and can cause burns. I also worry than in actual use, it could get hot enough to break the glass. All induction makers warn not to use pans with a ridge. If you do, anything bad that happens is arguably user error. There are quite a few single sided grill pans in the price range you're look at. Check out this low sided square one. Comments (6)Hi dmlove. I don't know if the "smooth" surface that longtime owners of cast iron pans rave about is the exact same as Wagner's "polished" when properly seasoned. I'll know after the pan arrives & gets seasoned, and if I can ever get my hands on an old skillet to compare. In researching on the web, many have commented that Lodge cast iron cookware has a rough surface that needs to be worn smooth with use & seasoning. Comments (42)Lou - no, I've never seen Maggio's around here. I'm HORRIBLE with names lol!! I can see the containers of the two most popular brands we have here, the label designes and everything, but can I think of the names? No!! It'll come to me. I haven't had a chance to deal with my Lodge pan yet - I usually have to cram everything in on the weekends. I never have time after work to get much done and now with gardening season here, if I do get anything done, it's usually in the garden! I plan on taking care of it this weekend tho. And I'm going to check out ebay as well. Besides the nice way they cook and all, I really like that if you need to, you can take the cast iron from the stovetop to the oven. They're just so versatile. And not having to replace pans a couple times a year because they're ruined will be great as well!! I hope I can find some of these older pans everyone else is talking about! I go to flea markets all the time, but I was never looking for cast iron before so I never paid attention to what's available! Comments (23)love2weed, I agree that the pan should be cleaned well first, then seasoned. I don't have a self cleaning oven, so that's out, but I have used spray on oven cleaner, put the pan in a garbage bag and left it overnight. Then you have a clean pan and you can start from scratch with seasoning. I also use shortening to season cast iron, some oils seem to get rancid to me. I rub all over, inside and out and put the pan in the oven upside down with foil under it to catch any drips. 350 for a couple of hours (maybe 3 or 4 if I forget), or 400 for an hour or so will start it off nicely. The very best seasoning method I've found is making french fries. Heat the oil hot enough to fry the potatoes and make a couple of batches. That oil soaks right in and in a couple of uses, you have a very nicely seasoned pan. I love cast iron, I have a set of skillets that I got in 1974 and they are nearly as slick as teflon. I'm still working on that old yard sale pan I got a couple of years ago, a Griswold "chicken fryer", but it's coming along... Annie...See MoreLars
