No saw needed... Thanks, Dcarch.

I'm too tired to look up where this started.

Where the first twinkle came is when Dcarch talked about 36 hr. sous vide chuck. So I looked up Kenji Lopez-Alt's post about it and did a trial on a "chuck steak". It was great, but developed a very hard bark. Dcarch suggested a Japanese carpentry saw, and I borrowed my father's food saw instead.

Rather than several roasts, the butcher gave me a single, 18 lb. chuck of bison, netted. Beautiful. Advantage, a big seam of fat. Disadvantage, I was expecting something that would fit in the bags. I had to whomp it into pieces. It didn't suffer, or even take offense. It just cooked away merrily. So as not to get so hard a bark, I sloshed on some homemade, low sugar barbecue sauce before putting it in the oven for the dry and heat stage. It was perfect. The meat was moist and luscious, and the bark was deep and tasty, without tasting of the sauce or needing the saw. My regularly slicing knife worked just fine rather than bouncing like it did on the test. All the kitchen helpers were grabbing bits and making nomnom sounds.

The guests were very happy and ate a huge amount.
