taking a soil test....how consistent of a result will you get?

I know it's recommended that everyone that takes gardening seriously to get a soil test. How consistent would this result be though if you have a large plot of land with differing amounts of organic matter in certain areas? I have some areas where I have dumped so much organic matter onto and others that were probably somewhat neglected in that aspect. There's also the issue of what kind of organic matter I'm putting into these areas. Some areas received a load of oyster shells and lobster tails while another received mostly coffee grounds. The soil just seems like it could very well be different all throughout the area. Is this not much of a concern or would it be a better idea to take several soil tests in the suspected areas that would be different?
