I'd probably opt for sliders over the shelves. I'd likely move the micro to the area beside the ref and plunk it on a micro shelf. I might tuck it into an oven cabinet with a pull out shelf underneath to take care of providing a landing space for the micro - the advantage being able to site it at counter height for shorties. The other potential position for a micro would be a drawer micro under counter next to the ref - the advantage to that being that I could use simple uppers. I'm not a big fan of bifolds. I don't mind those sort of stacking sliders where there are more than two sliding sliding doors. Or something like having 15" of wall on the sides and 12" of shelf depth across the back - then use a pair of 18" doors that each slide out to the side - leaving about a 36" opening in the center. It uses up around 60-64" of width leaving 20" to 24" for decorative shelving or a drop zone or a family communications area. Any measurements above are just sorta-kinda widths or depths. Framing can take up any amount of space from 6" of depth down to just about an 1" if you use plywood to make something close to a built-in-place cabinet. Also, you'd need to choose between shelves supported on adjustable brackets on the back wall or shelves that are run between uprights with at least one extra upright.

Could be something like one of the following pics. Pretend the fridge/oven walls are full-height pantry storage, and the counters are to the left. Before I posted the earlier suggestion, I stood in the opening between my LR and the kitchen, where I have a stud-bay pantry. The opening is 28" at counter height, 29" below, and 30" above because that's the side of my cabinets. It doesn't seem tight to me, but--I have narrower than recommended work aisles in my small home. At the other end of that run, where I stand to use the KA mixer, the aisle is 31" at counter height, and 42" at head height, with open counter behind me, and the space behind me feels expansive. The shelf above the mixer is a few inches higher than the standard 18", to accommodate the tilted mixer head. At the narrowest point, in front of the stove wall, you'll have 41" at head height (if you have standard 12" deep uppers and a 1" counter overhang.) If you need more elbow room for certain tasks, you can step toward the sink, where there will be more space behind you. You can also make the uppers above the baking counter a little higher, to give you more head room. Eta, I meant to add that it will also depend on the size of your family members. I, and my grown kids, tend to be thin, so you should take size into consideration.

Julie, I have a desk in my kitchen area and I love it!! I have my recipes on my computer here so I can easily access them. I spend the majority of my time on the main level and I like being able to see out the front and back. I designed my kitchen so I could have my desk here. How will you use your pantry? Is it for all your food storage, paper towels, kitchen broom, etc? Or is it for specialty cookware? Good china? Entertaining needs? When my mother designed her kitchen and dining spaces, her pantry about the same size of yours was actually divided into two reach-ins. One opens to the breakfast room. She stored food and paper towels and some other miscellany. The other side was for specialty entertaining things, older sets of dishes, etc. (She also had a wall of storage cabinets, drawers, and coutertop in the dining room, measured and planned out for all her entertaining needs, that could be closed up with enormous bifold doors if needed.)
