Miele steam oven/convection oven, or others
Comments (8)I've had a Gagg combi for about 18 months and absolutely love it. I had a Gagg convection oven in my old house which is what got me to look at this, since I loved the way that cooked. This one has the added benefit of being able to add moisture to roasting or baking, so it isn't an either/or set up. I often cook a quick dinner with only the combi steam, and don't even use the burners on my range. I've written about this before, but to sum up, you control both the moisture level - 0%, 30%, 60%, 80% and 100% - as well as the temperature. There's a cookbook and a "wheel" which helps teach you what to do. I use the 100% steam setting at 220 degrees for things like veggies, fish, poached chicken breasts and I like that fact that it begins steaming almost immediately. It's wonderful for boiled eggs. I've used it to cook meatloaf or ribs at 400 degrees and 100% steam - you get crispy, browned top but very moist interior. I recently did a braised oxtail dish on my stove top for the first step (since I was browning them) and then, the next day, finished it by slow cooking in the Gagg, I just measured one of my largest baking pans- it measures 17" by 12" and fits into the oven - it's tight by it glides in and there's enough room for air to circulate (because of the rack supports on the sides). I think that because it's a smaller size it's more energy efficient in terms of heating up and coming up to steam and maintaining the moisture level. But, I have no proof - just my gut feeling. I like reheating things in the Gagg much better than in an microwave - especially things like beef or chicken - they taste fresh cooked. I've done mundane things, like reheat pizza - 375 with 30% moisture - or refresh a stale baguette. I've roasted chicken - haven't done a turkey but based on the size of my roaster, I bet a turkey up to 15 pounds would fit. What do I use my microwave for? Reheating my coffee, popcorn, warming maple syrup. Not much else. I could probably do everything but the popcorn in the Gagg- maybe I'll experiment! LOL. In short, I use it instead of my stovetop, I use it for baking (pie crusts are great), I use it for roasting (with moisture to keep the meat moist and tender.) I've been surprised by the versatility and how often I turn to the Gagg instead of my range/burners/ovens/microwave. Last night, I roasted some cauliflower which comes out nutty and caramelized. I love to do meat - ham & cheese, sliced chicken & monterey jack, etc. - on an egg twist roll and bake it at 400 with 30% moisture. Yummy! It seems so wild to have that big kitchen and have your toaster oven and coffee maker outside it. I could even see it more over across from the fridge by the dining room. I know we talked about this ahead and I have some 'in restrospect' ideas that would now mean tearing into sheetrock... I hope someone else has a better idea! How about a cute cart? Or, can the toaster oven sit in the bottom shelf to the right of the sink with the coffee maker in that corner of the counter? Comments (17)I am another enthusiastic fan of the Wolf CSO. We installed it over a Wolf E-series convection oven and use the CSO 3-4x more than the E-series. We also hardly use the microwave, which is now located in a lower cabinet and gets used maybe once a week when there are three adults cooking different things at the same time. Another great advantage to the CSO is it has a "Keep Warm" feature, which functions much like a warming drawer. Comments (12)I want the broil feature and only those two offer it... wolf does not. Since i will be putting the cso with a single convection under it and another single convection under a cooktop next it I don't think there is an option to mix appliance, While Miele's CSO has a broiler element, it's only about as powerful as what you'd expect for an "average" residential oven. I find it works to give dishes a little bit of heat from the top, but it isn't really very useful for char broiling. That's a problem with a lot of ovens. If you want to get a good broiler, you need to buy a higher-end gas oven (those often advertise what they call "IR" broilers), or you need to buy a Bluestar wall oven. That is one of the few electric ovens that is known for having a very good broiler element. Putting a wall oven under a cooktop doesn't generally work all that well. Not only do you have to negotiate the clearance requirements between the wall oven and the cooktop, there also is the problem that wall ovens typically sit closer to the floor. With in-wall installation, that's awesome. But when you are already in a bottom cabinet, that means the door is too close to the floor and it's very awkward to access. As for mixing and matching, I honestly wouldn't worry too much. Nobody is really going to notice after a few weeks. It's a little more noticeable when the units are directly next to each other. But even that doesn't matter much. We have a stack of Miele CSO and SpeedOven in the wall, and a Bluestar range right next to it. I don't think anybody has spotted the different brands yet. We also have a paneled SubZero fridge, but we installed a Miele handle, as it happened to be cheaper and a design that worked better for us....See Moresmiling
